Ingredients

Main Ingredients
  • 1 cup pumpkin puree (canned or homemade; for extra flavor, use roasted pumpkin) Provides moisture and flavor.
  • 1 cup unsweetened cocoa powder (for a richer taste, use high-quality cocoa) Gives the brownies a rich chocolate flavor.
  • ½ cup maple syrup (alternatively, agave nectar works well) Acts as a natural sweetener.
  • 1 tsp vanilla extract (for that warm, aromatic touch) Enhances the flavor.

Method

Preparation
  1. Preheat the oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.
  2. In a large bowl, combine the pumpkin puree with the maple syrup and vanilla extract until smooth.
  3. Gradually sift in the cocoa powder, mixing until just combined. The batter will be thick and decadent.
  4. Pour the batter into the prepared baking dish and spread it evenly.
Baking
  1. Bake for 20 to 25 minutes, or until the edges feel firm and a toothpick inserted into the center comes out mostly clean.
  2. Let the brownies cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.

Notes

Store any leftover brownies in an airtight container at room temperature for up to 3 days. They can also be refrigerated for up to a week. If you want to enjoy them later, freeze them cut into squares and place in a freezer bag for up to 3 months.
