Ingredients

Main Ingredients
  • 1 pound Chicken breasts (diced into bite-sized pieces)
  • 2 cups Bell peppers (any color, sliced)
  • 1 large Onion (sliced)
  • to taste Black pepper (freshly ground)
  • 2 tablespoons Soy sauce for flavor
  • 3 cloves Garlic (minced)
  • 2 tablespoons Cooking oil for sautéing
  • 2 cups Rice optional, to serve

Method

Cooking
  1. In a large skillet, heat about 2 tablespoons of cooking oil over medium heat until shimmering.
  2. Throw in the diced chicken pieces. Cook until they are golden brown and fully cooked, approximately 5-7 minutes.
  3. Add the sliced onions and minced garlic to the pan. Sauté until the onions are translucent and fragrant, about 3-4 minutes.
  4. Toss the bell peppers into the skillet. Cook for an additional 5 minutes, stirring occasionally so everything is evenly coated.
  5. Sprinkle in black pepper and soy sauce, stir everything to ensure it’s well-mixed. Taste and adjust the seasoning as necessary.
  6. Remove from heat and serve the chicken mixture over a bed of rice or enjoy it on its own.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on the stovetop over low heat, adding a splash of water or broth to keep it moist. Optional ingredient variations include diced jalapeños for spiciness or shrimp for a different protein.
