Ingredients

Main Ingredients
  • 1 lb chicken breast, diced Use leftover rotisserie chicken for a quick meal prep option.
  • 1 cup orzo pasta Consider whole wheat orzo for a more nutritious option.
  • 2 cups chicken broth Add more when reheating if needed.
  • 1 cup diced carrots Feel free to include seasonal vegetables.
  • 1 cup frozen peas
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste Salt and pepper
  • 1 cup heavy cream (optional) For a richer sauce.

Method

Preparation
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent and the garlic is fragrant, about 3-4 minutes.
  3. Add the diced chicken breast to the skillet and season with salt, pepper, thyme, and rosemary. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  4. Stir in the diced carrots and frozen peas, followed by the chicken broth. Bring the mixture to a gentle boil.
  5. Once boiling, add the orzo pasta. Simmer, uncovered, for about 10 minutes, stirring occasionally until the orzo is tender and has absorbed most of the broth.
  6. If using heavy cream, stir it in just before serving and heat until warmed through.
  7. Transfer to bowls and enjoy the cozy flavors!

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months. Reheat with a splash of broth or cream to restore moisture.
