Ingredients

Dry Ingredients
  • 2 cups all-purpose flour You can substitute some for whole wheat flour.
  • 1 tsp baking soda
  • ½ tsp salt
Wet Ingredients
  • 1 cup unsalted butter, softened Ensure it's at room temperature.
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs Use room temperature eggs for best results.
  • 1 tsp vanilla extract Can be replaced with almond extract for variations.
  • 1 cup coconut cream Substitute with sour cream or yogurt for variation.
Optional Add-ins
  • Chocolate chips or nuts Add your favorite mix-ins for extra flavor.

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt; set aside.
  3. In a separate bowl, beat the softened butter with both sugars until creamy and fluffy, about 2-3 minutes.
  4. Add eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet, mixing until just combined. Be cautious not to overmix.
  6. Fold in the coconut cream until evenly incorporated.
Baking
  1. Using a cookie scoop, drop generous portions of dough onto the prepared baking sheet, leaving space between each.
  2. Bake for 12-15 minutes or until the edges are golden and the centers look slightly underbaked.
  3. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

To keep cookies fresh, store in an airtight container at room temperature for up to a week. Freeze the cookie dough, bake as needed, adding a couple of extra minutes for frozen dough. Don’t overmix once flour is added and consider chilling the dough for 30 minutes to enhance flavors.
