  • 1 1/2 cups self-rising flour If using all-purpose flour, add 2 teaspoons baking powder and 1/2 teaspoon salt.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment.
  2. In a large bowl, mash the bananas with a fork until mostly smooth.
  3. Whisk in the eggs and brown sugar until glossy and slightly aerated.
  4. Fold in the Greek yogurt (or sour cream) until homogenous.
  5. Gradually add the self-rising flour, folding gently until no streaks of flour remain.
Baking
  1. Pour the batter into the prepared pan, smoothing the top with a spatula.
  2. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  3. Let the bread cool in the pan for 10 minutes, then lift it out by the parchment to cool completely on a rack.

Notes

You can add chopped walnuts or chocolate chips for texture, or replace brown sugar with maple syrup. For a festive twist, add cinnamon and dried cranberries.
