Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment.
- In a large bowl, mash the bananas with a fork until mostly smooth.
- Whisk in the eggs and brown sugar until glossy and slightly aerated.
- Fold in the Greek yogurt (or sour cream) until homogenous.
- Gradually add the self-rising flour, folding gently until no streaks of flour remain.
Baking
- Pour the batter into the prepared pan, smoothing the top with a spatula.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then lift it out by the parchment to cool completely on a rack.
Notes
You can add chopped walnuts or chocolate chips for texture, or replace brown sugar with maple syrup. For a festive twist, add cinnamon and dried cranberries.
