Preparation
- Preheat the oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan with parchment paper.
- Mash the bananas in a large bowl until mostly smooth with a few small lumps.
- Stir the beaten egg and melted butter into the mashed bananas until glossy and well combined.
- Add the sugar and vanilla if using; mix until the combination shines.
- Add the flour and a pinch of salt. Fold gently until just combined.
- Pour the batter into the prepared pan, smoothing the top. Optionally, sprinkle sliced bananas, chocolate chips, or nuts on top.
Baking
- Bake for 45-55 minutes, or until a toothpick inserted comes out clean or with a few moist crumbs.
- Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
