Preparation
  1. Preheat the oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan with parchment paper.
  2. Mash the bananas in a large bowl until mostly smooth with a few small lumps.
  3. Stir the beaten egg and melted butter into the mashed bananas until glossy and well combined.
  4. Add the sugar and vanilla if using; mix until the combination shines.
  5. Add the flour and a pinch of salt. Fold gently until just combined.
  6. Pour the batter into the prepared pan, smoothing the top. Optionally, sprinkle sliced bananas, chocolate chips, or nuts on top.
Baking
  1. Bake for 45-55 minutes, or until a toothpick inserted comes out clean or with a few moist crumbs.
