Ingredients
  

Main ingredients
  • 3 pieces ripe avocados Ripeness is essential.
  • 1 small shallot or 1/4 small red onion, finely minced Shallot gives a milder taste.
  • 1 small jalapeño, seeded and finely chopped Leave seeds for more heat.
  • 1 medium Roma tomato, seeds removed and finely diced Optional, adds color and juiciness.
  • 1/4 cup fresh cilantro, chopped Substitute with parsley if desired.
  • 2 tablespoons juice of lime Add more to taste; lemon can be used in a pinch.
  • 1/2 teaspoon fine sea salt Plus more to taste.
  • Freshly ground black pepper to taste
  • Pinch of ground cumin (optional) A hint of warmth.

Method
 

Preparation
  1. Halve and pit the avocados. Scoop the flesh into a medium bowl.
  2. Add the lime juice and a sprinkle of salt. Mash to the preferred texture.
  3. Fold in the minced shallot or red onion, jalapeño, and diced tomato.
  4. Add chopped cilantro and a pinch of cumin if using. Mix gently.
  5. Taste and adjust seasonings. Transfer to a serving bowl.
  6. Press plastic wrap directly onto the surface if not serving immediately.

Notes

Guacamole is best fresh but can be stored in an airtight container with plastic wrap pressed onto the surface for up to 2 days. To store longer, cover with a layer of lime juice.
