Preparation
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, whisk the melted butter and sugar until smooth. Let it cool slightly.
- Beat in the eggs one at a time, then stir in the vanilla. Fold in the mashed bananas and yogurt until just combined.
- Gently fold the dry ingredients into the wet mixture with a spatula. Add nuts, chocolate chips, or orange zest if using. Do not overmix.
- Pour the batter into the prepared pan and smooth the top.
Baking
- Bake for 55–65 minutes, until a toothpick comes out with a few moist crumbs.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool further.
Notes
For best results, use very ripe bananas and avoid overmixing the batter. Can be served warm with butter or as a dessert.
