Dry Ingredients
  • 1.5 cups all-purpose flour Swap half for whole wheat for a heartier loaf.
  • 1 teaspoon baking soda
  • 0.5 teaspoon fine sea salt
  • 0.5 teaspoon ground cinnamon Optional; toast briefly for depth.
Wet Ingredients
  • 0.5 cups unsalted butter, melted Browned butter adds a nutty note.
  • 0.75 cups granulated sugar Reduce to 0.5 cups for less sweetness.
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 3 ripe bananas, mashed about 1 1/2 cups The riper, the sweeter.
  • 0.5 cups plain yogurt or sour cream Keeps the crumb tender.
Add-ins (Optional)
  • 0.5 cups chopped walnuts or pecans For crunch. Replace with chocolate chips for dessert.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, whisk the melted butter and sugar until smooth. Let it cool slightly.
  4. Beat in the eggs one at a time, then stir in the vanilla. Fold in the mashed bananas and yogurt until just combined.
  5. Gently fold the dry ingredients into the wet mixture with a spatula. Add nuts, chocolate chips, or orange zest if using. Do not overmix.
  6. Pour the batter into the prepared pan and smooth the top.
Baking
  1. Bake for 55–65 minutes, until a toothpick comes out with a few moist crumbs.
  2. Cool in the pan for 10 minutes, then transfer to a wire rack to cool further.

Notes

For best results, use very ripe bananas and avoid overmixing the batter. Can be served warm with butter or as a dessert.
