Ingredients
  

For the Skewers
  • 1 lb boneless, skinless chicken thighs Tender and juicy; chicken breasts can also work.
  • 1 cup plain Greek yogurt For a creamy sauce; low-fat version can be used.
  • 2 tablespoons sweet chili sauce Adds sweetness.
  • 1 tablespoon sriracha Adjust according to spice tolerance.
  • 1 tablespoon lime juice For zesty kick.
  • Salt and pepper To taste.
  • 1 pack Wooden skewers Soaked in water for at least 30 minutes.

Method
 

Preparation
  1. Cut the chicken thighs into bite-sized pieces, ensuring uniformity for even cooking.
  2. In a bowl, mix together the Greek yogurt, sweet chili sauce, sriracha, lime juice, salt, and pepper until well combined.
  3. Toss the chicken pieces in half of the sauce mixture and marinate for at least 15 minutes.
Cooking
  1. Preheat your air fryer to 400°F (200°C).
  2. Thread the marinated chicken onto the soaked skewers, leaving space between each piece.
  3. Place the skewers in the air fryer, ensuring they aren't overcrowded.
  4. Cook for 10-12 minutes, flipping halfway through to achieve a golden brown color.
  5. Remove from the air fryer and brush the remaining sauce on the skewers for extra flavor.

Notes

These skewers are great hot off the air fryer and can be paired with a cucumber salad or served over rice. Leftovers can be stored for up to three days and reheated.
