Ingredients

For the Skewers
  • 1 pound Chicken breast, cut into bite-sized pieces Tender and juicy, perfect for skewering.
  • 1/2 cup Rice flour Adds a delightful crunch; you can substitute with all-purpose flour.
For the Bang Bang Sauce
  • 1/2 cup Mayonnaise Creamy and rich, it forms the base of the sauce.
  • 1/4 cup Sweet chili sauce Adds sweetness and a kick of heat.
  • 1 tablespoon Sriracha For those who love an extra punch of spice.
  • 1 tablespoon Lime juice A splash of acidity to brighten the dish.

Method

Preparation
  1. Cut your chicken breasts into bite-sized pieces and pat them dry.
  2. In a bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and lime juice. Set aside about one-third of the sauce for drizzling later.
  3. In another bowl, place the rice flour. Dredge each chicken piece in the flour until fully coated, shaking off the excess.
Cooking
  1. Thread the chicken pieces onto soaked wooden skewers, ensuring they’re not too close together for even cooking.
  2. Preheat your grill or grill pan over medium heat. Cook the skewers for about 3-4 minutes on each side or until they reach an internal temperature of 165°F.
  3. When fully cooked, toss the skewers in the reserved Bang Bang sauce for that perfect flavor boost.
Serving
  1. Arrange your skewers on a platter and drizzle with the remaining sauce. Garnish with fresh cilantro or green onions for added flair.

Notes

Store leftovers in an airtight container in the fridge for up to three days. To reheat, pop skewers in the microwave or onto the grill or a hot skillet.
