- Cut your chicken breasts into bite-sized pieces and pat them dry.
- In a bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and lime juice. Set aside about one-third of the sauce for drizzling later.
- In another bowl, place the rice flour. Dredge each chicken piece in the flour until fully coated, shaking off the excess.
Cooking
- Thread the chicken pieces onto soaked wooden skewers, ensuring they’re not too close together for even cooking.
- Preheat your grill or grill pan over medium heat. Cook the skewers for about 3-4 minutes on each side or until they reach an internal temperature of 165°F.
- When fully cooked, toss the skewers in the reserved Bang Bang sauce for that perfect flavor boost.
Serving
- Arrange your skewers on a platter and drizzle with the remaining sauce. Garnish with fresh cilantro or green onions for added flair.
