Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly and pierce each one several times with a fork.
Cooking
  1. Place the sweet potatoes on a baking sheet and roast for approximately 45 minutes or until tender.
  2. In a bowl, combine the shredded chicken with the barbecue sauce, coating all pieces for maximum flavor.
  3. Remove sweet potatoes from the oven, carefully slice open lengthwise, and fluff the insides with a fork.
  4. Season sweet potato insides with salt and pepper, then fill with BBQ chicken mixture.
  5. Sprinkle shredded cheese on top and return to the oven for an additional 10 minutes.
Finishing
  1. Top with chopped green onions and serve warm.
