  • 1 cup shredded cheese Cheddar or a Mexican blend works wonderfully.

  • 1 packet taco seasoning Or homemade seasoning for a personalized touch.
Wrap and Fry
  • 4 medium flour tortillas For easy wrapping.
  • 1/2 cup cooking oil For frying.

Method
 

Preparation
  1. In a large skillet, brown the ground beef over medium heat, breaking it apart with a wooden spoon.
  2. Add taco seasoning and stir in black beans and cheese, mixing until the cheese is melted and everything is well combined.
Assembling
  1. Lay a tortilla flat on a clean surface. Scoop a generous portion of the beef filling onto one side.
  2. Fold in the sides and roll it up tightly, ensuring it is secured to keep the filling intact.
Cooking
  1. In a separate skillet, heat about 1/2 inch of cooking oil over medium heat. Check if the oil is hot enough by dropping a small piece of tortilla; it should sizzle upon contact.
  2. Carefully place a chimichanga seam-side down in the hot oil. Fry until golden brown and crispy, about 3-4 minutes per side.
  3. Remove and drain on paper towels.
Serving
  1. Serve hot with your choice of sour cream, salsa, or guacamole.

Notes

For variations, try substituting ground beef with sautéed mushrooms or zucchini for a vegetarian option, or brush the chimichangas with oil and bake them at 400°F for a healthier twist.
