  • 1 pound beef sausage choose your favorite variety
  • 6 large eggs
  • 8 ounces cream cheese, softened you can opt for reduced-fat if desired
  • 1 cup shredded cheese cheddar is great, but feel free to experiment
  • 1 cup milk
  • to taste salt
  • to taste pepper
  • optional diced vegetables like bell peppers or onions for added flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, crumble and cook the beef sausage until browned, about 8-10 minutes. Drain any excess grease.
  3. In a large bowl, whisk together the eggs, cream cheese, milk, salt, and pepper. Incorporate the sausage after it has cooled slightly.
  4. Stir in the shredded cheese and mix well. If desired, fold in diced vegetables at this step.
  5. Pour the mixture into a greased 9x13 inch casserole dish, spreading it evenly.
Baking
  1. Place the dish in the preheated oven and bake for 25 to 30 minutes, or until the edges are bubbly and the center is set.
  2. Once baked, allow the casserole to cool for a few minutes before cutting into squares.

Notes

Feel free to use different types of sausage and add greens like spinach or kale. Enjoy with fresh salad or muffins.
