  • 1/3 cup melted butter gives a tender crumb; swap with coconut oil for dairy-free
  • 1/2 cup sugar or 1/3 cup brown sugar for deeper caramel notes
  • 1 large egg, beaten or use 1/4 cup applesauce for vegan-ish binding
  • 1 teaspoon vanilla extract or a splash of rum for a festive twist
  • 1 teaspoon baking soda keeps it light and airy
  • 1 pinch salt balances sweetness
  • 1 1/2 cups all-purpose flour swap half for whole wheat for nuttier texture

  • 1/2 cup chopped walnuts or chocolate chips

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment.
  2. In a mixing bowl, mash the bananas until mostly smooth.
  3. Stir in the melted butter.
  4. Add the sugar, beaten egg, and vanilla extract to the banana-butter mix. Whisk until combined.
  5. Sprinkle the baking soda and salt over the wet mixture, then fold in the flour gently. Avoid overmixing.
  6. Fold in any optional mix-ins like walnuts or chocolate chips.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  2. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  3. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For gluten-free, replace flour with a 1:1 gluten-free blend. For lower sugar, cut sugar and add 1/4 cup of mashed pear for moisture.
