Preparation
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment.
- In a mixing bowl, mash the bananas until mostly smooth.
- Stir in the melted butter.
- Add the sugar, beaten egg, and vanilla extract to the banana-butter mix. Whisk until combined.
- Sprinkle the baking soda and salt over the wet mixture, then fold in the flour gently. Avoid overmixing.
- Fold in any optional mix-ins like walnuts or chocolate chips.
Baking
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For gluten-free, replace flour with a 1:1 gluten-free blend. For lower sugar, cut sugar and add 1/4 cup of mashed pear for moisture.
