  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup buttermilk substitute with almond milk for a dairy-free option
  • 2 large eggs
Dry Ingredients
  • 1 1/2 cups all-purpose flour or swap for a gluten-free mix for a healthier option
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt

  • 1 cup nuts or chocolate chips for added texture and flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Prepare a 9x5 inch loaf pan by greasing it or lining with parchment paper.
  2. In a large mixing bowl, combine pumpkin puree, granulated sugar, brown sugar, vegetable oil, buttermilk, and eggs. Whisk until well blended.
  3. In another bowl, mix together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid overmixing.
  5. If desired, fold in nuts or chocolate chips.
  6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Baking
  1. Bake for approximately 60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Wrap leftover pumpkin bread tightly in plastic wrap or aluminum foil to keep at room temperature for up to four days, or freeze for up to three months. Thaw overnight in the refrigerator and warm in the oven before serving.
