Ingredients

Main ingredients
  • 1 pound breakfast sausage Feel free to use spicy or mild, depending on your preference.
  • 1 can (16 oz) refrigerated biscuits For a quicker option, you can use frozen biscuits, just thaw them first.
  • 4 large eggs For added protein and richness.
  • 2 cups milk Whole milk or 2% works well for creamy gravy.
  • 1/4 cup all-purpose flour This will help thicken your gravy.
  • to taste salt and pepper Essential for seasoning.
Optional toppings
  • shredded cheese or fresh herbs For a fun twist, try adding before baking.

Method

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the sausage over medium heat until browned, breaking it up into crumbles. Remove excess grease if needed.
  3. In the same skillet, sprinkle the flour over the cooked sausage. Stir for about 1 minute to cook off the raw flour taste.
  4. Gradually whisk in the milk, stirring constantly until the gravy thickens. Season with salt and pepper.
  5. In a lightly greased casserole dish, place the chopped biscuits at the bottom, covering the surface evenly.
  6. Pour the sausage gravy directly over the biscuits, spreading it out gently.
  7. In a separate bowl, beat the eggs and pour them over the sausage mixture.
  8. Bake in the preheated oven for about 30 minutes or until the eggs are set and the top is lightly golden.

Notes

This casserole is great for meal prep—assemble it the night before and bake in the morning. Serve with fresh fruit or a light salad for a complete meal. For storage, keep leftovers in an airtight container in the fridge for up to 3 days, or freeze before baking.
