Preparation
- In a mixing bowl, combine Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir well until the mixture is smooth and creamy.
- Gently fold in the blueberries, ensuring they’re coated with the yogurt mixture.
- Using a tablespoon or small cookie scoop, drop spoonfuls of the blueberry-yogurt mixture onto a baking sheet lined with parchment paper. Make sure to leave some space between each scoop.
- Place the baking sheet in the freezer and allow the clusters to freeze for at least two hours, or until solid.
- Once frozen, transfer the clusters to an airtight container or freezer bag and store in the freezer. They can be enjoyed straight from the freezer.
Notes
These clusters are perfect for making ahead of time and are versatile enough to be a snack or dessert. Experiment with ingredients like nuts or chocolate for variations.
