Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Stir in the cooked sausage, diced tomatoes, and half of the cheese.
- In a separate pan, lightly sauté the green onions for about 2 minutes until tender.
Assembly
- Take a tortilla and place a generous scoop of the egg mixture in the center.
- Roll it up tightly and place it seam-side down in a greased baking dish.
- Repeat this process for each tortilla.
- Once all tortillas are in the dish, pour any remaining egg mixture over the top.
- Sprinkle the remaining cheese on top.
Cooking
- Bake for 25-30 minutes or until the cheese is bubbly and golden brown.
