Ingredients

For the cookie dough
  • 1 cup unsalted butter For that rich flavor, brown it to perfection.
  • 1 cup granulated sugar Adds sweetness and structure.
  • 1 cup packed brown sugar For depth and a hint of caramel flavor.
  • 1 cup pumpkin puree The star ingredient that brings moisture and flavor.
  • 2 large eggs Helps bind everything together.
  • 3 cups all-purpose flour The base of your cookie dough.
  • 1 teaspoon baking soda To give the cookies a lovely lift.
  • 1 teaspoon ground cinnamon Essential for that warm, cozy flavor.
  • 1/2 teaspoon nutmeg A pinch for that extra seasonal spice.
  • 1/2 teaspoon salt Balances the sweetness.
  • 1 cup semi-sweet chocolate chips Because who can resist chocolate?

Method

Preparation
  1. In a medium saucepan over medium heat, melt the butter. Stir continuously until it turns a golden brown and smells nutty, about 5-7 minutes. Be careful not to let it burn. Let it cool slightly.
  2. In a large bowl, combine the brown butter, granulated sugar, and brown sugar. Mix until well combined.
  3. Stir in the pumpkin puree and eggs until smooth and combined.
  4. In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chocolate chips.
  6. Using a cookie scoop or tablespoon, drop dough onto lined baking sheets, spacing them about 2 inches apart.
Baking
  1. Preheat your oven to 350°F (175°C) and bake for 12-15 minutes until the edges are golden. The centers will remain soft.
  2. Remove from the oven and let them cool on the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Feel free to swap out semi-sweet chocolate for dark chocolate or even white chocolate, depending on your taste. Consider adding chopped nuts or dried cranberries for extra flavor. Chill the dough for an hour before baking to enhance the flavors.
