  • 1 lb smoked sausage or kielbasa Any variety will do; turkey sausage is a healthier option.
  • 1 medium head cabbage (about 2 lbs) Green cabbage works best; savoy can be mixed in.
  • 1 large onion Sweet or yellow onions add a beautiful flavor base.
  • 3 cloves garlic Fresh is best, but pre-minced can be used.
  • 1 tablespoon olive oil To sauté your ingredients.
  • to taste salt and pepper Essential seasonings to enhance flavors.
  • optional optional spices Try adding red pepper flakes for a kick or caraway seeds.

Preparation
  1. Slice the sausage into bite-sized pieces, chop the cabbage into strips, and dice the onion and garlic.
Cooking
  1. In a large skillet, add olive oil and heat over medium-high heat until shimmering.
  2. Add the sausage to the skillet, cooking undisturbed for about 5 minutes until browned, stirring occasionally.
  3. Toss in the diced onion and minced garlic, stirring gently for about 3-4 minutes until the onion is translucent.
  4. Gradually add the cabbage, stirring so it begins to wilt.
  5. Sprinkle with salt, pepper and any optional spices; continue cooking for 15-20 minutes until the cabbage is tender.
  6. Taste and adjust seasoning as needed before serving.

Notes

Feel free to add veggies like bell peppers or carrots. For a cheesy variant, stir in shredded cheese during the last minutes of cooking.
