Preparation
- Start by boiling a large pot of salted water. Cook the pasta according to package instructions until al dente, usually about 8 to 10 minutes. Drain and rinse the pasta under cold water to cool.
- In a mixing bowl, whisk together the extra virgin olive oil, balsamic vinegar, salt, and pepper until well combined.
- In a large bowl, combine the cooled pasta, halved cherry tomatoes, mozzarella, and torn basil. Drizzle the prepared dressing over and toss gently to coat.
Chill and Serve
- Allow the salad to chill in the refrigerator for 15 to 30 minutes. Before serving, give it a final toss and adjust seasoning if necessary.
Notes
This dish can be prepared a few hours in advance to allow flavors to develop. It pairs well with grilled meats and is ideal for potlucks.
