  • 8 ounces 8 ounces of your favorite pasta (fusilli or penne recommended) Pasta should be cooked until al dente.
  • 8 ounces 8 ounces of mozzarella balls or diced mozzarella Can substitute with vegan cheese if desired.
  • 2 cups 2 cups of halved cherry tomatoes These pack a burst of flavor!
  • 1 handful a handful of fresh basil leaves, torn Essential for the signature Caprese taste.
Dressing
  • 1/4 cup 1/4 cup of extra virgin olive oil The good stuff adds richness.
  • 2 tablespoons 2 tablespoons of balsamic vinegar For a tangy kick.
  • to taste Salt and Pepper Simple but essential for flavor.

Method
 

Preparation
  1. Start by boiling a large pot of salted water. Cook the pasta according to package instructions until al dente, usually about 8 to 10 minutes. Drain and rinse the pasta under cold water to cool.
  2. In a mixing bowl, whisk together the extra virgin olive oil, balsamic vinegar, salt, and pepper until well combined.
  3. In a large bowl, combine the cooled pasta, halved cherry tomatoes, mozzarella, and torn basil. Drizzle the prepared dressing over and toss gently to coat.
Chill and Serve
  1. Allow the salad to chill in the refrigerator for 15 to 30 minutes. Before serving, give it a final toss and adjust seasoning if necessary.

Notes

This dish can be prepared a few hours in advance to allow flavors to develop. It pairs well with grilled meats and is ideal for potlucks.
