  • 1 lb ground beef Can substitute with ground turkey or a plant-based protein.
  • 4 large potatoes, thinly sliced Russet or Yukon Gold for a creamier texture.
  • 1 medium onion, diced
  • 2 cups shredded cheese Cheddar is classic; can mix varieties.
  • 1 cup milk
  • 1 can cream of mushroom soup Can use homemade for better flavor.
  • Salt and pepper to taste
  • Optional: chopped chives or parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch casserole dish.
  2. In a skillet over medium heat, brown the ground beef, adding the diced onion until translucent. Drain excess fat.
  3. In a large bowl, combine the cream of mushroom soup, milk, salt, and pepper. Mix well.
  4. Layer half of the sliced potatoes on the bottom of the casserole dish. Then put half of the beef mixture and half of the cheese on top.
  5. Repeat the layers with the remaining potatoes, beef, and cheese. Pour the soup mixture over the top.
Cooking
  1. Cover with foil and bake for 45 minutes.
  2. Remove the foil and bake for an additional 15 minutes, until the potatoes are tender and cheese is bubbly and golden.
  3. Let it cool for a few minutes before garnishing with chopped chives or parsley.

Notes

Store leftovers in an airtight container for up to 3 days or freeze for up to two months. Reheat in the oven or microwave for best results.
