Preparation
- Preheat your oven to 400°F (200°C).
- Wash and cut the potatoes into small cubes, about 1-inch in size.
- In a large bowl, mix the potato cubes with olive oil, ranch seasoning, salt, and pepper until well-coated.
Roasting
- Spread the seasoned potatoes evenly on a baking sheet and bake for 20 minutes.
- After 20 minutes, add the sliced smoked sausage to the baking sheet and toss everything together.
- Return to the oven for an additional 10 minutes.
- Remove from the oven and sprinkle the shredded cheddar cheese over the sausage and potatoes.
- Put it back in the oven for another 5 minutes, until the cheese is melted and bubbly.
Finishing Touches
- Once out of the oven, drizzle sour cream over the top and sprinkle with fresh parsley for garnish.
- Serve and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze your mixture. Reheat in the oven or microwave, adding a splash of water or a dollop of sour cream to maintain moisture.
