  • 4 medium medium-sized potatoes (Yukon Gold or Russet) Leave skins on for extra texture.
  • 1 lb smoked sausage (kielbasa or andouille) Turkey sausage can be used for a lighter version.
  • 1 cup shredded cheddar cheese Pepper jack cheese adds a spicy twist.
  • 1 packet ranch seasoning mix Homemade ranch seasoning is a fun option.
  • 1/4 cup sour cream Greek yogurt is a great substitute.
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish Optional, but adds a lovely pop of color.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut the potatoes into small cubes, about 1-inch in size.
  3. In a large bowl, mix the potato cubes with olive oil, ranch seasoning, salt, and pepper until well-coated.
Roasting
  1. Spread the seasoned potatoes evenly on a baking sheet and bake for 20 minutes.
  2. After 20 minutes, add the sliced smoked sausage to the baking sheet and toss everything together.
  3. Return to the oven for an additional 10 minutes.
  4. Remove from the oven and sprinkle the shredded cheddar cheese over the sausage and potatoes.
  5. Put it back in the oven for another 5 minutes, until the cheese is melted and bubbly.
Finishing Touches
  1. Once out of the oven, drizzle sour cream over the top and sprinkle with fresh parsley for garnish.
  2. Serve and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze your mixture. Reheat in the oven or microwave, adding a splash of water or a dollop of sour cream to maintain moisture.
