Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Drain the excess grease.
- In a large bowl, combine the cooked sausage, hash browns, 1 cup of shredded cheddar cheese, diced onion, garlic powder, salt, and pepper.
- In another bowl, whisk together the eggs and milk until well combined.
- Pour the egg mixture over the sausage and hash brown mixture, stirring gently until everything is evenly coated.
- Pour the entire mixture into a greased 9x13-inch baking dish, spreading it evenly.
- Sprinkle the remaining 1 cup of cheddar cheese evenly over the top.
- Place the dish in the oven and bake for 45-50 minutes, or until the center is set and the top is golden brown.
- Allow the casserole to cool for a few minutes before garnishing with chopped green onions or herbs, if desired.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months. Reheat at 350°F (175°C) until warmed through. Customize with bacon or smoked ham or add spinach and bell peppers for a healthier option.
