  • 1 pound breakfast sausage can use turkey sausage for a healthier twist
  • 30 ounces frozen hash browns use pre-packaged for convenience
  • 2 cups shredded cheddar cheese feel free to mix cheeses for added flavor
  • 6 large eggs
  • 2 cups milk
  • 1 small onion, diced
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
Garnish
  • Optional: chopped green onions or fresh herbs for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Drain the excess grease.
  3. In a large bowl, combine the cooked sausage, hash browns, 1 cup of shredded cheddar cheese, diced onion, garlic powder, salt, and pepper.
  4. In another bowl, whisk together the eggs and milk until well combined.
  5. Pour the egg mixture over the sausage and hash brown mixture, stirring gently until everything is evenly coated.
  6. Pour the entire mixture into a greased 9x13-inch baking dish, spreading it evenly.
  7. Sprinkle the remaining 1 cup of cheddar cheese evenly over the top.
  8. Place the dish in the oven and bake for 45-50 minutes, or until the center is set and the top is golden brown.
  9. Allow the casserole to cool for a few minutes before garnishing with chopped green onions or herbs, if desired.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months. Reheat at 350°F (175°C) until warmed through. Customize with bacon or smoked ham or add spinach and bell peppers for a healthier option.
