Preparation
- Preheat the Oven: Set your oven to 375°F (190°C) to get it warmed up while you prepare the potatoes.
- Prepare the Potatoes: Wash and scrub the potatoes thoroughly, then poke holes in them with a fork to help steam escape as they cook.
Baking Potatoes
- Bake the Potatoes: Place the potatoes directly on the oven rack or a baking sheet. Bake for 45 minutes, or until they are tender when pierced with a fork.
Cooking Meat
- While the potatoes are baking, brown the ground meat in a skillet over medium heat. Drain excess fat, then add the taco seasoning and a splash of water. Stir well and allow it to simmer for 5-10 minutes.
Assembling
- Once the potatoes are cooked, let them cool slightly, then slice them down the middle, creating a pocket. Gently squeeze the ends to open them up.
- Spoon in the seasoned meat, topping it with a generous amount of cheese and sour cream.
- If you want to get the cheese extra melty, pop the stuffed potatoes back in the oven for an additional 5-10 minutes.
- Top with chopped green onions, and if desired, add olives or jalapeños for an extra kick.
Serving
- Enjoy those cheesy, taco-filled potatoes fresh out of the oven!
Notes
These Cheesy Taco Potatoes are delightful on their own, but even better with sides like a refreshing salad or zesty salsa.
