  • 1 lb ground beef or use ground turkey for a leaner option
  • 1 packet taco seasoning or homemade for a fresher taste
  • 1 cup shredded cheese cheddar, pepper jack, or a blend for an extra kick
  • 1 cup flour tortillas or corn for a gluten-free variation
  • 1 can refried beans or black beans for a hearty twist
  • to taste cooking spray to ensure the sticks don’t stick

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  3. Mix in the taco seasoning with ¼ cup of water; stir well and let simmer for a few minutes.
  4. Add refried beans to the skillet and combine everything thoroughly.
  5. Take a tortilla, spread a spoonful of the beef and bean mixture across the center, and sprinkle cheese over it.
  6. Fold the sides in, then roll from the bottom to create a stick. Repeat with remaining tortillas.
Baking
  1. Place the sticks seam side down on a greased baking sheet.
  2. Lightly spray the tops with cooking spray; this will help them reach a golden perfection.
  3. Bake for 10-15 minutes, until the cheese is melted and the tortillas are lightly crispy.
  4. Remove from the oven and let them cool slightly before serving.

Notes

Store leftover Cheesy Taco Sticks in an airtight container in the fridge for up to three days. For a crispy texture when reheating, bake them at 375°F (190°C) for about 10 minutes.
