Pasta and Chicken
  • 2 cups rotini pasta Feel free to swap with penne or farfalle
  • 1 lb grilled chicken breast, chopped You can use leftovers for an even quicker meal
Salad Components
  • 1 cup Caesar dressing Homemade or store-bought for convenience
  • 2 cups Romaine lettuce, chopped
  • 1/2 cup grated Parmesan cheese Consider adding more if you love cheese
  • Freshly ground black pepper To taste
  • Optional: Croutons For added crunch

Method
 

Preparation
  1. In a large pot, bring salted water to a boil. Add the rotini pasta and cook it according to the package instructions until al dente. Drain and let it cool.
  2. While the pasta is cooking, grill or pan-sear the chicken breasts until they are fully cooked, about 6-8 minutes per side, depending on thickness. Let the chicken rest before chopping it into bite-sized pieces.
Combining Ingredients
  1. In a large bowl, mix the cooked pasta, chicken, chopped Romaine, and half of the Parmesan cheese together. Drizzle the Caesar dressing over the top.
  2. Mix everything thoroughly to make sure all the ingredients are well-coated with the dressing.
  3. Transfer your pasta salad to a serving dish and sprinkle the remaining Parmesan cheese on top along with black pepper to taste. If you’re opting for croutons, sprinkle them on just before serving for that perfect crunch.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. The flavors will meld beautifully, making it even tastier the next day. Toss in croutons right before eating to maintain crunch.
