Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large mixing bowl, combine the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk until the mixture is smooth and well-combined.
- In another bowl, whisk together the all-purpose flour, baking soda, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined. Take care not to overmix!
- Gently fold in the chocolate chips.
Baking
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
Wrap tightly in plastic wrap for storage or freeze for up to three months. Experiment with nuts or dried fruit for variations.
