Ingredients
  

Pasta Salad Ingredients
  • 8 oz Rotini or fusilli pasta Cook according to package instructions.
  • 2 cups Cooked chicken Shredded or diced; rotisserie chicken is a great shortcut.
  • 6 slices Crispy bacon Cook until crispy.
  • 1 cup Cherry tomatoes Halved for a juicy pop.
  • 1 cup Cucumber Diced for crunch.
  • 1/2 cup Red onion Finely chopped for sharpness.
  • 1 cup Cheddar cheese Grated for added flavor.
Dressing Ingredients
  • 1/2 cup Mayonnaise Base of the creamy dressing.
  • 1/2 cup Sour cream For added creaminess.
  • 1 tsp Mustard A dollop for tang.
  • to taste Salt and pepper For seasoning.

Method
 

Preparation
  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
  2. Cook the bacon in a skillet until crispy. Remove and drain on paper towels, then chop into bite-sized pieces.
Make the Dressing
  1. In a large bowl, combine mayonnaise, sour cream, mustard, salt, and pepper to create a smooth dressing. Adjust seasoning to taste.
Combine Ingredients
  1. Add the cooled pasta, chicken, bacon, cherry tomatoes, cucumber, red onion, and cheddar cheese to the bowl with the dressing. Stir gently until all ingredients are well-coated.
Chill and Serve
  1. Cover the bowl and refrigerate for at least 30 minutes before serving to allow flavors to meld. Enjoy cold or at room temperature.

Notes

Feel free to mix up this recipe to suit your taste, such as swapping spinach for kale or adding bell peppers for extra crunch. A lighter version can be achieved by using Greek yogurt in place of mayonnaise and sour cream.
