Method
Preparation
- Preheat your oven to 400°F (200°C).
- Rinse the chicken and pat dry. Season both sides with salt, pepper, and paprika.
Coating
- Pour buttermilk into a shallow bowl. Dip each chicken piece in buttermilk, allowing excess to drip off.
- In another dish, place crushed cornflakes. Roll buttermilk-coated chicken in cornflakes, pressing gently for a good coating.
Baking
- Line a baking sheet with parchment paper. Place coated chicken on the sheet and drizzle with oil or melted butter.
- Bake for 25–30 minutes until cooked through and coating is golden brown and crunchy (internal temperature 165°F/75°C).
Serving
- Let chicken rest for a few minutes. Serve and enjoy!
Notes
For variations, consider adding cayenne for spice, Italian herbs for aromatic flavor, or a honey mustard glaze for sweetness. Serve with mashed potatoes or salad.
