  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 limes (Juice)
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large mixing bowl, combine the black beans, corn, diced bell peppers, red onion, cherry tomatoes, and avocado.
  2. Gently fold in the chopped cilantro, being careful not to mash the avocado.
  3. In a separate small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper.
  4. Pour the dressing over the vegetable mixture and toss gently to coat.
  5. Let the Cowboy Caviar sit for about 10 minutes to allow the flavors to meld before serving. Enjoy it with tortilla chips or as a zesty side dish!

Notes

Serve chilled for the best flavor. Customize with spices like chili powder for extra heat. Store leftovers in an airtight container in the refrigerator for 2-3 days.
