  • 6 large eggs
  • 2 cups milk Almond or oat milk works well for dairy-free versions.
  • 4 cups cubed bread Use stale bread for added texture.
  • 2 cups shredded cheese Cheddar or a mix for a flavor punch.
  • 1 medium onion, diced
  • 1 medium green bell pepper, diced Or any color you prefer.
  • Salt and pepper To taste.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the breakfast sausage over medium heat until browned and crumbly, about 5-7 minutes. Drain the excess fat.
  3. Add the diced onion and green bell pepper to the skillet, cooking until they are soft, about 3-4 minutes.
  4. In a large bowl, beat the eggs and add the milk, salt, and pepper.
  5. Stir in the cooked sausage mixture, cubed bread, and cheese, ensuring everything is well incorporated.
  6. Pour the mixture into a greased 9×13-inch baking dish.
Baking
  1. Place in the oven and bake for 40-45 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.

Notes

Feel free to swap out ingredients for variations or add herbs and spices for extra flavor. Leftover casserole can be stored in the refrigerator for up to 4 days or frozen for longer storage. Reheat in the microwave or oven.
