  • 12 ounces fettuccine or your favorite pasta Feel free to swap for whole grain or gluten-free pasta.
Sauce Ingredients
  • 1 cup heavy cream You can substitute half with chicken broth for a lighter option.
  • 1 teaspoon Cajun seasoning Add more for garnish.
  • 1 tablespoon olive oil For sautéing the sausage.
  • 3 cloves garlic, minced Be careful not to burn while sautéing.
  • 1/2 cup grated Parmesan cheese For a depth of flavor.
  • Fresh parsley for garnish Adds color and freshness.
  • Salt and pepper, to taste Season as preferred.

Method
 

Preparation
  1. Begin by cooking your pasta in a pot of salted boiling water according to package instructions until al dente. Reserve a cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced andouille sausage and cook until browned, about 4-5 minutes.
  3. Stir in the minced garlic and sauté for an additional 1-2 minutes, being careful not to let it burn.
  4. Add the shrimp to the skillet along with the Cajun seasoning. Cook until the shrimp turn pink and opaque, about 3-4 minutes.
Cooking
  1. Lower the heat and slowly pour in the heavy cream. Stir to combine, allowing it to thicken slightly.
  2. Add the grated Parmesan cheese and stir until melted.
  3. Toss the drained pasta into the skillet with the sauce. If the mixture feels too thick, add a bit of the reserved pasta water to loosen it up.
  4. Finally, taste the pasta and add salt, pepper, or more Cajun seasoning as preferred.
  5. Plate your stunning dish and garnish with fresh parsley and a sprinkle of Cajun seasoning.

Notes

For variations, swap shrimp for chicken or a mix of seafood and consider adding vegetables like bell peppers or spinach. Serve with garlic bread or a fresh green salad.
