Preparation
- Begin by cooking your pasta in a pot of salted boiling water according to package instructions until al dente. Reserve a cup of pasta water before draining.
- In a large skillet, heat olive oil over medium heat. Add the sliced andouille sausage and cook until browned, about 4-5 minutes.
- Stir in the minced garlic and sauté for an additional 1-2 minutes, being careful not to let it burn.
- Add the shrimp to the skillet along with the Cajun seasoning. Cook until the shrimp turn pink and opaque, about 3-4 minutes.
Cooking
- Lower the heat and slowly pour in the heavy cream. Stir to combine, allowing it to thicken slightly.
- Add the grated Parmesan cheese and stir until melted.
- Toss the drained pasta into the skillet with the sauce. If the mixture feels too thick, add a bit of the reserved pasta water to loosen it up.
- Finally, taste the pasta and add salt, pepper, or more Cajun seasoning as preferred.
- Plate your stunning dish and garnish with fresh parsley and a sprinkle of Cajun seasoning.
Notes
For variations, swap shrimp for chicken or a mix of seafood and consider adding vegetables like bell peppers or spinach. Serve with garlic bread or a fresh green salad.
