Ingredients

For the Salad
  • 2 large large cucumbers, sliced thinly
For the Dressing
  • 1 cup sour cream (or Greek yogurt for a lighter twist)
  • 2 tablespoons mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • Salt and pepper, to taste
  • Optional: a sprinkle of sugar for added sweetness

Method

Preparation
  1. Start by washing the cucumbers thoroughly. Slice them thinly and place them in a large mixing bowl.
  2. In a separate bowl, mix the sour cream (or Greek yogurt), mayonnaise, apple cider vinegar, and dill. Stir until smooth.
  3. Pour the dressing over the cucumbers. Toss gently to coat all the cucumber slices evenly.
  4. Sprinkle with salt, pepper, and optional sugar. Give another gentle toss.
  5. Let the salad sit in the refrigerator for at least 10 minutes before serving. This helps the flavors to develop!
  6. Enjoy it as a refreshing side dish, perhaps alongside grilled meats or sandwiches.

Notes

For the best flavor, allow the salad to refrigerate for at least an hour before serving. Use a mandoline for perfectly uniform cucumber slices. If you want to prevent excess water from cucumbers, sprinkle them with salt and let them sit for 10 minutes before mixing with the dressing. Consider mixing in fresh herbs like parsley or chives for a unique twist.
