  • 4 pieces boneless, skinless chicken breasts
  • 2 cups sliced mushrooms Consider using a mix for diverse flavors
  • 1 cup heavy cream You can substitute with half-and-half for a lighter version
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

  1. Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium heat.
  2. Add the chicken breasts to the skillet and cook for about 6-7 minutes on each side, or until they are golden brown and cooked through. Remove them from the skillet and set aside.
  3. In the same skillet, add the chopped onions and sauté until they’re translucent. Then, add the garlic and sliced mushrooms. Cook until the mushrooms are browned and have released their moisture, about 5-6 minutes.
  4. Lower the heat and pour in the heavy cream. Stir in the dried thyme and let it simmer for about 5 minutes until slightly thickened.
  5. Return the chicken to the skillet, coating it in the creamy mushroom sauce. Let it simmer together for another 2-3 minutes to absorb all the flavors.
  6. Garnish with fresh parsley before serving. This dish pairs wonderfully with rice, pasta, or a fresh side salad.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 2-3 days. To reheat, pop it in the microwave or warm it on the stove over low heat. If freezing, consider storing the chicken and sauce separately to maintain texture.
