Preparation
- In a large pot, bring water to a boil and cook the ramen noodles according to package instructions until al dente. Drain and set aside.
- In a separate pot, heat a tablespoon of oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant (about 1 minute).
Cooking
- Pour in the broth and bring it to a gentle simmer. Stir in the heavy cream and soy sauce, allowing the creamy mixture to blend.
- Toss in your choice of vegetables, letting them soften in the broth for about 3-5 minutes.
- Add the cooked ramen noodles to the pot, stirring until everything is well combined.
- If using pre-cooked chicken or shrimp, add it now. For tofu, let it warm through for a couple of minutes.
- Taste and adjust seasoning with salt or chili paste, if desired. Ladle into bowls and garnish with green onions.
Notes
Leftover creamy ramen can be stored in an airtight container in the fridge for up to 3 days. To reheat, add a splash of broth over low heat and stir until warmed through. For meal prep, chop vegetables and protein in advance.
