  • 2 cans refrigerated crescent roll dough
  • 6 large eggs
  • 1 cup milk (or a non-dairy alternative)
  • 1 cup shredded cheese (cheddar or your favorite blend)
  • 1 cup cooked and crumbled breakfast sausage or ham Feel free to swap with turkey sausage for a healthier option.
  • 0.5 cup diced bell peppers (optional)
  • Salt and pepper to taste
  • Fresh herbs for garnish (chives or parsley are lovely)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Unroll the crescent roll dough and lay it evenly at the bottom of a greased 9x13-inch baking dish without separating the pieces.
  3. In a bowl, whisk together the eggs, milk, salt, and pepper until frothy.
  4. Sprinkle the cooked sausage, cheese, and diced vegetables over the crescent roll base.
  5. Pour the egg mixture evenly over the entire dish.
  6. Place the dish in the oven and bake for 25-30 minutes or until the eggs are set and the top is golden brown.
  7. Once out of the oven, let it cool slightly, then garnish with fresh herbs before slicing into squares.

Notes

This casserole can be prepared ahead of time. Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the microwave or the oven. For longer storage, freeze before baking.
