Ingredients
  

For the Filling
  • 4 oz smoked salmon, chopped feel free to use gravlax for a twist
  • 1 cup feta cheese, crumbled try a herbed feta for an extra flavor boost
  • 2 tablespoons cream cheese, softened for creaminess
  • 1 teaspoon smoked paprika smoked or sweet, based on your preference
  • 1 tablespoon fresh dill, chopped or swap with chives for a different kick
For the Pastry
  • 1 package puff pastry (2 sheets, thawed)
  • 1 egg beaten for that beautiful golden glaze

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the crumbled feta cheese, cream cheese, smoked paprika, and fresh dill. Mix until creamy and well-blended.
  3. On a lightly floured surface, roll out the puff pastry sheets to about 1/8 inch thick. Cut them into squares, approximately 3x3 inches in size.
Assembly
  1. Place a small spoonful of the feta mixture in the center of each square. Top with a piece of smoked salmon, and then fold the corners of the pastry to the center, pinching them to seal.
  2. Brush each pastry with the beaten egg.
Baking
  1. Line a baking sheet with parchment paper and place your assembled pastries inside.
  2. Bake for 15 minutes or until puffed and golden.
Serving
  1. Let them cool slightly and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a preheated oven at 350°F (175°C) for about 10 minutes.
