- Lightly grease your crockpot with non-stick spray.
- In a large mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and oregano until fully combined.
- Layer half the diced bread evenly at the bottom of the crockpot.
- Add half of the crumbled sausage, followed by half the diced bell peppers and onions, then sprinkle with half the cheese.
- Pour half of the egg mixture over the layered ingredients in the crockpot.
- Repeat the layers with the remaining bread, sausage, vegetables, and cheese, finishing with the rest of the egg mixture.
Cooking
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the casserole is set and a toothpick inserted comes out clean.
- Once cooked, let it sit for a few minutes before serving to let the flavors meld.
Notes
For variations, consider replacing sausage with sautéed mushrooms for a vegetarian option or adding spicy jalapeños. Leftovers can be stored in an airtight container in the fridge for up to three days or frozen for two months.
