Preparation
  1. Wash and prepare your vegetables and fruits. Peel and dice the cucumbers and apples, and finely chop the red onion and parsley.
  2. In a large bowl, combine the diced cucumbers, apples, red onion, and parsley.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well blended.
  4. Pour the dressing over the salad mixture and gently toss to coat everything evenly.
  5. Taste and adjust the seasoning if needed, adding more salt, pepper, or lemon juice as desired.
  6. Let the salad sit for about 5 minutes to allow the flavors to meld before serving.

Notes

Feel free to swap the apples with pears for a different flavor twist, or add some feta cheese for an indulgent touch. Store leftovers in an airtight container in the refrigerator for up to two days.
