Preparation
- Rinse the quinoa under cold water to remove any bitterness. Drain well.
- In a medium saucepan, combine the rinsed quinoa and the water (or broth). Bring it to a boil, then reduce to a simmer. Cover and cook for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed.
- Once cooked, transfer the quinoa to a large mixing bowl. Add olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Incorporate optional nutritional yeast if desired.
Baking
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Using your hands, shape small bites (about 1 inch in diameter) and place them on the prepared baking sheet, ensuring they are spaced apart.
- Bake for 15-20 minutes, turning halfway through until golden and crunchy on the outside.
- Allow the bites to cool slightly before serving. Enjoy warm or at room temperature.
Notes
These bites can be stored in an airtight container in the refrigerator for up to a week. Reheat in the oven for about 10 minutes at 350°F (175°C) to regain crunchiness. For added flavor, toast the quinoa in a dry pan before cooking.
