  • 1 cup quinoa (any variety) Red quinoa adds a beautiful color.
  • 2 cups water or vegetable broth Vegetable broth enhances flavor.
  • 1 teaspoon olive oil
  • 1 teaspoon garlic powder Feel free to substitute with cumin for an earthy flavor.
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika Use your favorite spice blend if preferred.
  • to taste salt and pepper
  • 1/4 cup nutritional yeast Optional for a cheesy flavor without dairy.

Method
 

Preparation
  1. Rinse the quinoa under cold water to remove any bitterness. Drain well.
  2. In a medium saucepan, combine the rinsed quinoa and the water (or broth). Bring it to a boil, then reduce to a simmer. Cover and cook for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed.
  3. Once cooked, transfer the quinoa to a large mixing bowl. Add olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Incorporate optional nutritional yeast if desired.
Baking
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Using your hands, shape small bites (about 1 inch in diameter) and place them on the prepared baking sheet, ensuring they are spaced apart.
  3. Bake for 15-20 minutes, turning halfway through until golden and crunchy on the outside.
  4. Allow the bites to cool slightly before serving. Enjoy warm or at room temperature.

Notes

These bites can be stored in an airtight container in the refrigerator for up to a week. Reheat in the oven for about 10 minutes at 350°F (175°C) to regain crunchiness. For added flavor, toast the quinoa in a dry pan before cooking.
