Ingredients

Main Ingredients
  • 2 large large cucumbers, diced into bite-sized pieces
  • 1 cup feta cheese, crumbled
  • 1/2 unit red onion, finely chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • to taste salt and pepper

Method

Preparation
  1. Start by washing the cucumbers. Dice them into bite-sized pieces, ensuring they’re uniform for even flavor.
  2. Finely chop the red onion and add it to the cucumbers. The onion’s sweetness complements the salad beautifully.
  3. Sprinkle the crumbled feta cheese and fresh dill over the cucumber and onion mixture.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper until fully combined.
  5. Pour the dressing over the cucumber mixture and gently toss until everything is well-coated. Be careful not to crush the feta too much.
  6. For the best flavor, let the salad chill in the refrigerator for at least 30 minutes before serving.

Notes

Serve with grilled meats or pita bread. Store leftovers in an airtight container in the refrigerator for up to three days. Not meant to be reheated.
