Salad Ingredients
  • 2 large cucumbers, sliced Choose English cucumbers for less seeds.
  • 1 medium sweet onion, thinly sliced Vidalia onions work wonderfully.
  • 1 cup sour cream Greek yogurt is a great alternative for a lighter version.
  • 2 tablespoons apple cider vinegar Adds a lovely kick.
  • 1 tablespoon sugar To balance the tang.
  • Salt and pepper to taste
  • Fresh dill or parsley for garnish Optional, but it adds a lovely pop.

Method

Preparation
  1. Begin by washing the cucumbers thoroughly. Slice them thinly; you can remove the seeds or leave them for extra texture.
  2. Peel and slice the sweet onion into very thin rings or half-moons.
  3. In a mixing bowl, combine the sour cream, apple cider vinegar, sugar, salt, and pepper. Stir until well blended to create the dressing.
  4. In a large bowl, combine the sliced cucumbers and onions.
  5. Pour the creamy dressing over the cucumber and onion mixture. Toss gently to coat everything evenly.
  6. Let the salad sit for about 10 minutes before serving to allow the flavors to meld beautifully.
  7. Garnish with fresh dill or parsley just before serving for a burst of freshness.

Notes

For variations, add sliced radishes for crunch, swap in Greek yogurt for a lighter dressing, or toss in avocado for creaminess. This salad is perfect for summer barbecues or as a side for grilled meats.
