  • 1 medium cucumber, peeled and grated
  • 1 cup all-purpose flour or swap with whole wheat for a nuttier flavor
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil can substitute with melted coconut oil
  • 1 large egg
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the grated cucumber, sugar, and vegetable oil. Mix well until combined.
  3. Add the egg and vanilla extract to the mixture, stirring until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix, as this may affect the texture.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Baking
  1. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Serve warm with butter or cream cheese. Wrap tightly for storage and keep in an airtight container for up to 3 days, or freeze for later enjoyment.
