  • 4 medium English cucumbers Regular cucumbers can also be used but they may require peeling.
  • 1 small red onion Thinly sliced for a gentle kick.
  • 1/4 cup fresh dill Substitute with parsley if preferred.
  • 1/4 cup white vinegar Apple cider vinegar can be used for a milder flavor.
  • 2 tablespoons olive oil Extra virgin adds a lovely taste.
  • Salt and pepper To taste.

Preparation
  1. Start by washing the cucumbers well. If using regular cucumbers, peel them.
  2. Slice the cucumbers thinly and then place them in a large mixing bowl.
  3. Toss in the thinly sliced red onion, mixing it with the cucumbers for an even distribution.
  4. In a small bowl, whisk together the white vinegar, olive oil, salt, and pepper to create a dressing.
  5. Pour the dressing over the cucumber and onion mixture. Add fresh dill, then gently toss everything together until well-coated.
  6. Let the salad chill in the refrigerator for at least 10 minutes before serving to allow the flavors to meld.

Notes

For variations, feel free to add cherry tomatoes, feta cheese, or swap herbs based on what's in season. You can also salt cucumbers for added crispiness and use freshly chopped herbs for the best flavor.
