  • 1 pound shrimp, peeled and deveined
  • 2 cups cucumbers, diced (use Persian or English for better crunch)
  • 1/2 medium red onion, thinly sliced
  • 1 medium bell pepper, diced (any color works)
  • 1/4 cup fresh cilantro, chopped
Dressing Ingredients
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • to taste salt and pepper

Method
 

Cooking the Shrimp
  1. In a pan over medium heat, add a drizzle of olive oil. Once hot, toss in the shrimp, seasoning lightly with salt and pepper. Cook for about 2-3 minutes on each side, until pink and opaque.
Chilling the Shrimp
  1. Remove the shrimp from the heat and let them cool. To speed things up, place them in the refrigerator.
Mixing the Vegetables
  1. In a large mixing bowl, combine the diced cucumbers, bell pepper, red onion, and fresh cilantro.
Preparing the Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until well combined.
Combining Everything
  1. Once the shrimp are cool, add them to the vegetable mixture. Drizzle the dressing over the salad and toss everything gently to combine.
Serving
  1. This salad can be served immediately or chilled further in the refrigerator before serving.

Notes

Feel free to experiment with this salad! Consider adding diced avocado for a creamy texture or some spicy jalapeƱos for a kick. Store leftovers in an airtight container; best eaten within 2 days.
