  • 1 ripe ripe avocado Look for one that yields slightly when pressed.
  • 1/4 cup red onion Adds a nice bite; soak in cold water beforehand to mellow the flavor if desired.
  • 1/4 cup fresh cilantro For a fragrant finish; can be substituted with parsley if preferred.
  • 1 each Juice of 1 lime Brightens up the salad with its zesty punch.
  • to taste Salt and pepper Enhances all the flavors beautifully.

Method
 

Preparation
  1. Wash all the vegetables thoroughly. Dice the cucumbers, tomatoes, and avocado into bite-sized pieces.
  2. Thinly slice the red onion and chop the cilantro. If you soaked the onion in cold water, drain it well.
Mixing the Salad
  1. In a small bowl, whisk together the lime juice with a pinch of salt and pepper.
  2. In a large mixing bowl, gently toss the cucumbers, tomatoes, avocado, red onion, and cilantro together.
  3. Drizzle the lime dressing over the salad and mix carefully to avoid mashing the avocado.
  4. Taste and adjust seasoning, adding more salt or lime as necessary.
Serving
  1. Serve immediately or chill for about 20 minutes before serving for an even cooler taste.

Notes

Store in an airtight container in the refrigerator. Best enjoyed within a day as avocado can brown. For added freshness, store dressing separately.
