- Wash all the vegetables thoroughly. Dice the cucumbers, tomatoes, and avocado into bite-sized pieces.
- Thinly slice the red onion and chop the cilantro. If you soaked the onion in cold water, drain it well.
Mixing the Salad
- In a small bowl, whisk together the lime juice with a pinch of salt and pepper.
- In a large mixing bowl, gently toss the cucumbers, tomatoes, avocado, red onion, and cilantro together.
- Drizzle the lime dressing over the salad and mix carefully to avoid mashing the avocado.
- Taste and adjust seasoning, adding more salt or lime as necessary.
Serving
- Serve immediately or chill for about 20 minutes before serving for an even cooler taste.
Notes
Store in an airtight container in the refrigerator. Best enjoyed within a day as avocado can brown. For added freshness, store dressing separately.
