  • 2 large cucumbers, sliced thinly English cucumbers work best for a softer bite.
  • 1 medium sweet onion, thinly sliced Vidalia onions are ideal.
  • 1 cup vinegar Apple cider or white vinegar can be used.
  • 0.5 cup sugar Adjust to taste; honey can be substituted.
  • to taste Salt and pepper Season according to your taste.
  • optional Fresh dill or parsley, for garnish

Method
 

Preparation
  1. Start by slicing the cucumbers and sweet onion as thinly as you can.
  2. In a large bowl, combine the vinegar and sugar. Stir well until the sugar has dissolved.
  3. Add the sliced cucumbers and onions to the bowl. Toss gently to coat all the vegetables in the liquid.
  4. Season with salt and pepper according to your taste.
  5. Cover the salad with plastic wrap and let it chill in the refrigerator for at least 30 minutes.
  6. Before serving, give the salad another toss and garnish with fresh dill or parsley if desired.

Notes

Store the salad in an airtight container in the refrigerator for up to 3 days. For the best texture, serve chilled and do not reheat.
