  • 1 cup chopped dates (fresh or dried)
  • 1 cup boiling water
  • 1 teaspoon baking soda
  • 1.5 cups all-purpose flour Whole wheat can be used for a healthier option.
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup sugar Can be reduced for a less sweet loaf.
  • 0.5 cup chopped walnuts Can substitute with any nuts on hand.
  • 1 large egg, beaten For a vegan option, substitute with flaxseed meal.
  • 0.25 cup melted butter or vegetable oil

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a mixing bowl, combine the chopped dates and boiling water. Stir in the baking soda and let it sit for about 10 minutes.
  3. In another bowl, whisk together the flour, baking powder, and salt.
  4. Add sugar, nuts, and melted butter to the date mixture. Beat in the egg until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes until a toothpick inserted into the center comes out clean.
  7. Remove from oven and allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

For storage, wrap the cooled loaf tightly in plastic wrap or foil. It can be kept at room temperature for up to a week or refrigerated for a longer shelf life. For freezing, slice and freeze individually.
