Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- In a mixing bowl, combine the chopped dates and boiling water. Stir in the baking soda and let it sit for about 10 minutes.
- In another bowl, whisk together the flour, baking powder, and salt.
- Add sugar, nuts, and melted butter to the date mixture. Beat in the egg until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes until a toothpick inserted into the center comes out clean.
- Remove from oven and allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
For storage, wrap the cooled loaf tightly in plastic wrap or foil. It can be kept at room temperature for up to a week or refrigerated for a longer shelf life. For freezing, slice and freeze individually.
