Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large mixing bowl, whisk together the granulated sugar, brown sugar, oil, and eggs until well combined.
- Add in the vanilla extract and grated zucchini, stirring until evenly distributed.
- In a separate bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt.
- Slowly add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix.
- Fold in the chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Baking
- Bake for 50-60 minutes, or until a toothpick comes out clean in the center.
- Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For serving, enjoy the bread on its own or with whipped cream or a scoop of vanilla ice cream. Store leftovers tightly wrapped at room temperature for up to 3 days or freeze for up to 3 months.
